I'm happy to have the chance to share some of my favorite recipes with you. These famous recipes won the hearts of so many. I've been cooking for over 40 years, and can appreciate a delicious meal.
At a young age I started enjoying not only Italian food but Chinese food as well. Those were the type of restaurants my neighborhood was filled with. Eating a hot slice of pizza straight out of the oven from a New York or New Jersey Pizzeria is one of my favorite things to do.
Most kids love pizza, but the pizza I ate was mind blowing. Real Italian guys were making these pizza pies, and spoke very little English. So I guess it's needless to say I'm a little spoiled and very critical about pizza and Italian food.
For me the true Italian gravy (red sauce) is the star. When you taste it you'll remember it. People don't understand what pizza, calzone, chicken / eggplant Parmesan was like from the restaurants I grew up around unless they've lived in the area for a while.
I'm sure there are hundreds of amazing restaurants to eat Italian food in when you're within the New York and New Jersey borders. Even though you collect your favorite list, you'd always find a new gem by accident. N.Y, N.J. and Pennsylvania are hot spots for great food, especially Italian.
When the Italian guy from Italy is cooking with his cousins, it's usually a good thing. It's like eating in Italy, and yes I've tasted the food there too. It's about the person making your food, not which country or restaurant you're in.
If an Italian immigrant is making your food, you don't need to fly to Italy to get those flavors. I love eating in Epcot for that reason when visiting Florida. There are lots of imported Chefs in Epcot cooking at country specific restaurants.
If wanting good Italian or Oriental food without leaving the USA I highly recommend taking a 2 week food tour around the tri-state area and eat until you have tasted everything. And don't forget to at least take a weekend in Philly to try those traditional Philly Cheese Steaks. I'm sure you'll find some good Italian food there too!
When I write a sandwich cookbook I'll try to squeeze in an original Philly Steak Sandwich recipe. Getting back to my childhood, and eating all of that Italian and Chinese food. I specifically remember during the late 60's buying a slice of pizza at the counter of a local pizza parlor for around $0.30.
Times have changed, and so have the prices, but the great food is still out there if you know where to look. This book is an honest attempt to try to preserve not only the great flavors of the food but point you towards some of the most delicious Italian recipes which have influenced the world. I believe the recipes in this book are about as close as your gonna get to the original traditional ones.
