SAMPLE RECIPE - PALEO MINI MEATLOVES If you are looking for a tasty yet healthy meatloaf recipe, Paleo Mini Meatloaves are the perfect match for you.

These are gluten-free and grain-free and contain only healthy ingredients and you can make them in muffin tins. These mini meatloaves are great to prepare when you don't have much time so you can take these to work for lunch. They are full of vegetables so this is a nice way to incorporate vegetables in your diet plan.

Ingredients 2 pounds ground meat (preferably grass fed beef) 10 ounces spinach finely chopped 2 tsp oil 1 medium size onion finely chopped 6 ounces mushrooms finely diced 2-3 grated carrots 4 eggs, beaten 1/3 cup of coconut flour 2 tsp of salt 2 tsp of pepper 2 tsp of onion powder 1 tsp of garlic powder ¼ tsp grated nutmeg Instructions 1. Preheat oven to 375 degrees F 2. Take the spinach and squeeze the excess water.

Set aside 3. Put the pan on medium heat and add the oil and to it add the onions and mushrooms and fry it till it becomes little golden in color. 4.

In a large bowl, place the ground meat and add the spinach, carrots, fried mushroom, beaten eggs, coconut flour and all the spices. Combine all these ingredients together with your hands. 5.

Take 18 regular size muffin tins and fill it with the meatloaf mixture. 6. Place it in the oven and cook for 20-25 minutes.
